Sprouted Lentils

Growing things can be so daunting, whether it be sprouts or kombucha SCOBYs. Should it be this colour? Is this smell normal? Have I left it too long? Did I drain it enough? You can scour the internet and still be unsure whether you are creating a moldy monster or a replica of the inspiring photo you saw on Instagram.

Strip down your process and make things simple again.

 If I have learned anything, growing food in the kitchen is incredibly satisfying and far easier than it appears. You do not need the expensive cheesecloth or the fancy sprouting jar. With the proper ingredients, you can use what you already have in your kitchen to grow something incredibly nutritious.

Rinse lentils to remove rocks or residue.
Combine lentils and water (triple the amount of lentils) in a container. Cover with a towel, lid, or leave uncovered, storing on the counter or in the fridge. Allow lentils to soak for 12-24 hours. 

Drain the water out and rinse lentils with cool water (avoid warm or hot in the whole process).
Place slightly wet lentils in a container and cover with a cloth. Use a band to hold cloth if concerned about infestation. 

Note: Some recipes call for leaving the jar or bowl at an angle at this point. I have not experienced any mold by leaving my lentils + bowl upright on the counter. So, in honour of simplicity, this recipe does not call for angled-draining. 

You will repeat the watering, draining, and covering process twice a day.
Think of it like a plant: water twice a day and it will grow.

Each day, you will see longer and longer adorable, curly-q sprouts. You're doing it!
End the process by covering with a lentil and placing in the fridge. We recommend waiting until day 3-5 to end.
