Homemade Nut Butter
Process
Ready the almonds for roasting by lining a baking tray with parchment paper and spreading almonds across parchment paper.
Roast at 170F (75C) for 30 minutes, slowly roasting to preserve to the health benefits of the natural oils. A little patience can do your body good.
Remove from the oven and enjoy the warming smells and lovely, crackling sounds.
With cooled or fresh-out-of-the-oven-hot almonds, blend blend blend. The almonds will go from a grainy meal to a paste as the natural oils are released by the blending process.
During the 'meal' phase, you may need to scrape the sides to ensure that everything is blending.

Organic Raw Almonds
Dash of Salt

Parchment Paper (try a compostable one!)
High Speed Blender or Food Processor
(we use a Thermomix and also love this and this)
- Preheat your oven to 175C (350F)
- Line a baking sheet with parchment paper
- Spread desired amount of almonds across the baking sheet. We used 500g (2 cups) for this recipe- the minimum amount you should use
- Once preheated, roast for 15 minutes. Almonds should be slightly darker and some should be cracking
- Create a meal: Blend cool or hot almonds at Speed 6 (medium speed) for 1 minute
- Scrape the meal back to the center of the blender
- Blend at Speed 5 for 3 minutes, scraping as needed
Tip: apply this recipe to any nuts & mix and match- macadamia & cashew, hazelnut & cacao (hello, homemade nutella!), or a classic peanut butter
